Installing Roll up 18 (Exchange 2010)

Hi All,
Just looking for some help on how to attack an install of Security Roll Up 18 for our EXCHANGE 2010 estate.
We currently have servers spread over On Premises (within our office) and Cloud (MSP data centre). Cloud Exchange is still Exchange 2010 just in a remote data centre (not Office 365):
Cloud
cloudcas01 – Rollup 11 (Hub Transport, Client Access)
cloudcas02 – Rollup 11 (Hub Transport, Client Access)
cloudmbx01 – Rollup 11 (Mailbox)
cloudmbx02 – Rollup 11 (Mailbox)
cloudmbx01_dr – Rollup 11 (Mailbox)
cloudmbx02_dr – Rollup 11 (Mailbox)
cloudcas01_dr – Rollup 11 (Hub Transport, Client Access)
cloudcas02_dr – Rollup 11 (Hub Transport, Client Access)
On Premises
onpremexch03 – Rollup 11 (Hub Transport, Client Access, Mailbox, Unified Messaging)
exchhwit02 – Rollup 18 (Witness server)
onpremexch10 – Rollup 11 (Hub Transport, Client Access, Mailbox)
onpremexch01 – Rollup 11 (Hub Transport, Client Access, Mailbox)
onpremexch02 – Rollup 11 (Hub Transport, Client Access)
Reading online the general rule of thumb is to install in the following order:
1. Client Access server
2. Hub Transport server
3. Mailbox server
4. Unified Messaging server
But with such a mixture of roles across the estate, I just would like some clarity on how to start installing the rollup. Any help appreciated
