Remote Desktop Mail profile

We have set up a 2008R2 64bit remote desktop server – just for the equivalent of terminal services. We have loaded Office 2003.
Problem is that from a user who logs into a session you can’t configure a mail profile. Its Ok for the first time if you don’t make a mistake – but if you do or wish to change it you can’t
There seems to be no option here or on the Server itself for configuring mail profiles.
In 2008R2 – there seems to be no Contral Panel classic view where you can get to the legacy mail icon. I’m sure it must be there.
Ideally we would like to create a user desktop shortcut to run it.
Anyone any ideas how it can be done.
